If I knit for 12 hours a day, seven days a week for the rest of my life, I probably couldn’t knit up all the yarn in my stash. I know this is not abnormal for any Crafter, but geezzzzz! AND, I’ll bet it’s been over five years since I’ve purchased any yarn. So, that’s a good thing. Anyway, Goodwill in Rogers has a nice supply of yarn, if you’re so inclined.
Steak ‘n’ Bacon Cheddar Meatballs
Steak ‘n’ Bacon Cheddar Meatballs
2 tbsp. olive oil
1 medium onion, minced
8 oz. raw bacon, diced
2 lbs. ground beef
6 oz. cheddar cheese, grated
1/2 cup bread crumbs
3 eggs, lightly beaten
2 tsp. salt
1. Preheat oven to 450. Brush a 13×9-in. baking dish with 1 tbsp. olive oil. Heat remaining 1 tbsp. olive oil in a large skillet over medium heat. Add the onion s and bacon and saute, stirring frequently, until golden brown (about 10 minutes). 2. Using a slotted spoon, transfer onions and bacon from the pan to a small plate. Let cool. 3. Combine bacon, onions and the rest of the ingredients in a large bowl, and mix by hand until thoroughly incorporated. 4. Roll the mixture into 24 golf-ball-size meatballs, making sure to pack the meat firmly. Place the balls in the prepared baking dish, and roast until cooked through, 18 to 20 minutes. 5. Allow the meatballs to cool for 5 minutes before serving.
Yield: 24 meatballs

We took the king sized mattress set and all the bedding to Prop. There was a second showing of my property this morning. We enjoyed a cruise of Lake Minnetonka in celebration of our friends John & Rebecca’s wedding.

Pilates and Small Group Weights at TheMarsh. Renewed the plates on my X5 and Golf. The lady at the DMV had to use a magnifying glass to read the paperwork as well as to find the curser on her computer screen. I dropped a box off at FedEx that is destined for Fashionphile and another load of stuff at GoodWill. Met Steve for lunch at Harvest Moon. My Realtor brought over the paperwork for me to sign. My house is officially for sale. There will be no sign in the yard and no MLS. We removed the king size bed from the master bedroom, replacing it with the queen bed from the guest room. The bunks from the other guest room will be separated and put in the main guest room. I gathered all the king sized bedding and put that in the back of my X5.

My property was shown twice today, and I haven’t even signed the paperwork yet.

If I was already settled in my next life stage, I would be sending my deposit for this tour of Angkor Wat, The Kingdom of Cambodia & Luang Prabang, Laos. The coming 12-36 months are going to be extremely difficult. But, there’s so very much to look forward to!
